How to make those glorious French pastries, croissants, pain au chocolat, brioche and tartes - along with all the fillings you need. A great way to learn techniques on how to achieve the perfect pastes and crèmes, and impress your friends. Choux and sweet pastry, profiteroles and fruit tartlets, mille feuille, orange sponge, pastry cream.
Bread and Yeasted Doughs
Make yeasted breads, sourdough, sweet breads. Nothing can beat the smell of freshly baked bread but yeast can be tricky. We will show you how to make yeast your friend!
Knife Skills
Chop, cut, slice like a pro! In this class Chef will show you the best knives for the job, how to handle and care for your knives properly - and all of the necessary knife cuts you will need to know to julienne and mirepoix like the best of them!
Chicken and Lamb Butchery
A good chef knows that the best dishes are made from those that utilise all parts of the animal. You wont cover the whole lot in one 3 hour class but you will learn how to butcher a chicken and lamb loin to make a start! Create supremes, ballotines and tulips as well as a range of lamb cuts. 
Stocks and Sauces
Start with the essentials of good cooking. No cook can go far without being able to create their own fresh stocks and then use these in a variety of classic french sauces.
Canapes to Impress
A great selection of bite-size morsels to accompany those pre-dinner drinks.
One for the Boys
Already a great hit ! Learn how to cook the perfect steak with all the trimmings, along with a dose of real boy comfort food!
